Curry Shrimp

Ingredients:
1 lbs of deveined and deshelled shrimp
1 tbsp of fish seasoning
3 sprigs of fresh thyme
1 tsp of dried thyme
1 tsp of garlic powder
1 tsp of onion powder
1 tsp of black pepper
1 tbsp of curry powder
1/4 of a scotch bonnet pepper (less if you want if less spicy and more if you want it more spicy)
3 green onions
1 small white onion (sliced)
1 small white potato
1/4 of a red bell pepper
1/4 of a green bell pepper
1/4 of a carrot
1 tsp of garlic (minced)
1 tsp of ginger (minced)
4 pimento berries (crushed)
1 lime
Coconut oil
Water
Directions:
Rinse the shrimp with lime and water. Discard the water.
In a bowl add the shrimp, chopped scotch bonnet pepper, green onion and 1/2 of the small white onion. Then add the garlic powder, onion powder and fish seasoning as well as 1/2 of the curry powder, black pepper and dried thyme.
Preheat a sauté pan on medium heat, add about 1 tbsp of coconut oil then quickly add in the white potatoes, onions and carrots. Then add in the rest of the curry powder and cook for a few minutes.
Add in the garlic, ginger and fresh thyme sprigs as well as the pimento berries and sauté for about 3-5 minutes.
Add in the seasoned shrimp and cook down the curry powder for about 3-5 minutes.
Using about 1 cup of water rinse the bowl that had the seasoned shrimp, pour the water into the pan, add in the red and green bell pepper and cook until the sauce thickens slightly.
Serve with white rice.
