Sweet and Spicy Turkey Lettuce Cups
A new favorite!
Ingredients:
1 lbs of ground turkey
1 cup of basmati rice
1 cup of sweet pepper
2 garlic cloves
2 tbsp hosin sauce
2 tbsp sambal oelek sauce
1 tbsp sesame oil
1 cup white mushrooms
1 head of romaine lettuce
2 scallions
1 tsp of ginger
1 tbsp rice vinegar
3 tbsp sweet chili sauce
Directions:
Wash, dry and cut the garlic, ginger, scallions, mushrooms and peppers. Cut the ends off of the romaine lettuce and separate the leaves.
Cook the rice according to the package instructions.
In a bowl, combine the sweet chili sauce, hoisin sauce, sesame oil, vinegar and sambal oelek.
In a large skillet, add the ground turkey, season with salt and pepper and cook until lightly browned. Add 3 tbsp of the sauce and stir. Remove and place in a separate bowl.
Cook the vegetables and season with salt and pepper.
Add the cooked vegetables to the bowl of cooked turkey, stir to combine and season with salt and pepper, if necessary.
Assemble the lettuce cups using the lettuce leaves, cooked rice and ground turkey/vegetable mixture.
Serve
