Coleslaw

The perfect side for a BBQ night!

Ingredients

1 medium cabbage (outer leaves removed)

3 medium carrots, peeled and shredded

1 cup of mayonnaise

2 tbsp apple cider vinegar (or more to taste)

1 1/2 tbsp Dijon mustard

1/2 tsp ground mustard

1 tsp celery salt

1/4 tsp fresh ground black pepper or more to taste

1-2 tsp of white sugar

Directions:

  1. Quarter the cabbage through the core, cut out the core and finely shred. Place the shredded cabbage in a very large bowl.

  2. Add the shredded carrot to the cabbage and toss to incorporate .

  3. In a separate bowl, stir the mayonnaise, vinegar, mustard, celery salt, sugar and pepper together. Taste for acidity and seasoning then adjust as desired. Pour two-thirds of the dressing over the cabbage and carrot then mix well.

  4. If the coleslaw seems dry, add a little more of the dressing. Let sit in the refrigerator for at least an hour to let the flavors mingle and allow the cabbage to soften.
