Holy basil with Chicken

All aboard the Thai express!

Ingredients:

5-10 Thai chilies (to taste)

5 cloves of garlic

1 medium onion

1 cup of mushrooms

1 -2 chicken thighs (minced)

1 tbsp oyster sauce

1 tbsp soy sauce

2 tsp fish sauce

1 1/2 tsp dark soy sauce

2 tbsp water

1 1/2 tsp sugar

1 cup holy basil (or Thai basil)

Vegetable oil (as needed)

Jasmine rice (for serving)

2-3 eggs (1 per person)

Directions:

  1. Pound the Thai chilies and garlic into a rough paste.

  2. Combine oyster sauce, soy sauce, fish sauce, dark soy sauce, water and sugar in a small bowl.

  3. In a wok or large saute pan, saute the garlic-chili paste in 2 tbsp of vegetable oil over medium high heat until the garlic starts to turn golden.

  4. Add the minced chicken and toss until no large chicken clumps remain, add the sauce and continue tossing until the chicken is almost cooked through.

  5. Add onions and mushrooms, toss until the chicken is done.

  6. Remove from heat and stir in the holy basil.

  7. Taste and adjust seasonings as needed.

The fried egg:

  1. Add 2 tbs of vegetable oil to a small non-stick pan or wok over medium high heat.

  2. Once the oil is hot, crack the egg directly into the pan and let fry until the edges are browned and bubbly.

Serve the stir-fry over rice and top with the fried egg.
