Brown Stew Chicken
Take a trip to the islands!
Ingredients:
2 tsp salt
1/2 tsp black pepper
1/4 cup brown sugar
3 garlic cloves, minced
2 green onions
2 tbs cooking oil
1 large onion, chopped
1 red and green bell pepper, chopped
1 sprig of thyme
1 habanero pepper
1 tbsp ketchup (optional)
2 cups hot water
1 tsp salt (to taste)
Directions:
Season chicken with salt, black pepper, onion, garlic, habanero, thyme, bell peppers, juice from 2 limes and green onions. Marinate the chicken overnight or for at least one hour before frying.
Remove the marinade from the chicken and on medium heat fry the brown sugar in the cooking oil for 2 to 3 minutes until darkened.
Place the chicken and fry for 2 to 3 minute on each side. Remove chicken from pan.
Add the marinade, ketchup (optional) and 1 cup of hot water to pan. Stir, taste gravy and add 1 tsp of salt (if needed), then let simmer for 5 minutes.
Add chicken to gravy. Add 1 cup of hot water, turn heat to low and cover pan. Simmer chicken for 30 minutes or until it is tender and the gravy has thickened.

Add minced ginger, 2 green onions, 1-2 tsp of allspice, 1-2 tsp of cinnamon, 1/4 cup of soy sauce, 1 cup of chicken broth, 2 carrots along with the carrot greens to change the recipe up a bit. Make sure you adjust the salt and water accordingly.
