Dry Stir Fried Green Beans

A new way to eat your vegetables!

Ingredients:

150 g green beans (5 cm long)

1/4 tsp ginger

1 clove garlic (minced)

Spring onion (white parts only)

Dry chili (3 pieces)

1/3 tsp Sichuan pepper

1 tbsp Sichuan preserved vegetable

1 tbsp minced pork (optional)

1/8 tsp salt

1/4 sugar

Directions:

  1. Season wok with 2 tbsp oil on medium heat. Add green beans, add salt, stir fry until fragrant (about 5 mins). Put aside leaving the oil in the wok.

  2. Turn to low flame, add 1 tbsp oil into the wok if there is no more oil. Add minced pork, still till the pork is well cooked, mix with green beans and put aside.

  3. Add Sichuan pepper, cook until brown and put aside. Add ginger, garlic and spring onions, cook until fragrant, and mix with green beans.

  4. On medium flame, add 1/8 salt, 1/4 tsp sugar and stir two minutes, add preserved vegetables, mix and serve.
